Preparing for a picnic can be a bit stressful or it can be a lot of fun. Obviously every picnic is centered around bonding, laughter, and of course food. Picnics are embarked upon in order to bring together friends and family or to celebrate summer and life. Regardless of your reason for having a picnic, there are a variety of food choices when deciding upon a menu. Throughout this article we will examine some relatively easy but quite delicious picnic food recipes for meat, specifically focusing in on chicken.

Picnic Food Recipes for Meat (Chicken) #1: Tasty Roasted Chicken

Chicken is an all time favorite of most women, children and men. Regardless of age there is something about chicken and its versatility that leaves people wanting more. This specific recipe is a relatively simple roasted chicken dish with tons of flavor. You will need the following ingredients: lemon juice (1/2 cup), a bay leaf, ½ teaspoon of thyme, marjoram, and savory (all dried), cloves of garlic (5), roasting chicken (5 pounds).

Combine all ingredients except the chicken into a blender to finely chop and blend to create a mixture of the items. Simply add the chicken, coating each side, and allowing it to marinate in the mixture overnight. When preparing to cook, preheat the oven to 375 degrees Fahrenheit. Place the chicken on the roasting rack and add salt and pepper as desired. Allow it to roast for approximately an hour and a half with periodic basting with the seasoning throughout the roasting process.

Picnic Food Recipes for Meat (Chicken) #2: Baked Chicken Delight

Another great chicken dish for picnics is baked chicken. Although there are multiple ways to produce a tasty baked chicken for your next picnic, this recipe proves to be absolutely delightful. Ingredients include the following: skinless boneless chicken (3-4lbs), milk (3 tablespoons), Dijon mustard (2 tablespoons), Cajun seasoning (3 teaspoon), Greek yogurt (3/4 cup), olive oil (3 tablespoons), and salt and pepper to taste. You will also need breadcrumbs (2.5 cups).

Use a large Ziploc bag to combine the milk, mustard, Cajun seasoning (1 teaspoon), and yogurt. From add the chicken to the mixture, close the bag and shake until all pieces of the chicken are coated with the mixture (marinate overnight in the refrigerator for best results). Then preheat the oven to 400 degrees Fahrenheit. In a tray mix together the breadcrumbs, some salt, pepper, and the rest of the Cajun seasoning (2 teaspoons). Remove the chicken from the mixture bag and place it in the breadcrumbs, be sure to coat both sides. Afterwards apply some olive oil spray to each chicken breast and place them on a baking sheet covered with foil. Baking should take up to an hour or until the chicken is completely cooked with a golden brown hue.

Picnic Food Recipes for Meat (Chicken) #3: Grilled Chicken Sandwich

Picnics are known for their sandwiches; however, now you have a recipe for unique chicken sandwich that is sure to be pleasing. All you need is bread (white or wheat), sliced deli chicken, and Dijon mustard (or honey mustard). Simply add the chicken and Dijon mustard to the bread and place it on a plug in grill. Allow it to cook until both sides of the sandwich are browned and then remove. It is that simple and is quite delicious.
