Picnic is a great place for the whole family to enjoy together. People love to make food on picnic but the question arises that what to make. Many people spend the whole picnic on cooking and eating. They cook such things which are really time consuming and require a lot of effort, leaving you tired and then you are not able to enjoy with the family. Sometimes you even get the cooking accessories along and they are so heavy and huge to carry around that, again, you can’t enjoy on the picnic. These are many problems when you are going on a picnic so why don’t you think of having simple snacks? These simple snacks do not require much time and effort to get cooked. You just need a little stuff to carry around and basic cooking accessories to cook it. Also, they are tasty and you can carry on enjoying with your family.

There are many picnic snack recipes that can be used to make delicious food on a picnic. Some of such recipes are trail mix, humas, peanut-butter banana bites, cherry-tomato-mozzarella bites. These snacks for picnic do not require much of your energy to make them and not even much time to cook them. Just bring the simple ingredients from home or market and enjoy making different types of snaks on the picnic.

Trail Mix

Procedure: first of all, chop all the dates and mix well. Take a large bowl and mix kernels, resisins, soy beans, dates and cereal in each other properly. Your trail mix is ready and will make around 3 cups of trail mix. You can eat it as a snack or with sandwiches as well. Serve it with juices and enjoy the picnic.

Humas

1 cup chick peas

5 tablespoon of liquid from beans

Allergic to smoke from grilling foods? For picnic outings, bring a grill pan to avoid cooking over direct heat or fire. You may add a little oil to pan-sear those luscious fish fillets. It’s not pan-frying so health-conscious picnickers would have no worries about too much oil. Use non-sticky pans to make sure that foods will not stick while cooking.

Pan-grilling is also a good alternative when an electric grill is not available. This method is so simple, even a non-cook can produce a presentable and delectable fish dishes for the picnic meal.

The tricky part would be the making of different sauces that would enhance the taste of pan-grilled fish fillets and slices. Fortunately, you can buy lots of commercially-prepared sauces in jars and bottles. Although homemade concoctions would still taste best.

Like grilled fish, pan-grilled fish also goes well when served with vegetables: sauteed, parboiled, pan-grilled along with the fish, and just fresh. Cook green peas, corn kernels, and carrot bits in butter. Or just blanch baby carrots and baby corns along with strips of cabbage. White onion rings will look and taste great when cooked inside and around the whole fish. For something crunchy and crispy, serve pan-grilled fish with slices of cucumber and shreds of lettuce.

If you like it very, very simple, just drizzle you’re pan-grilled fish with creamy cheese and sprinkle finely ground white pepper or garlic powder. Don’t like cream or cheese? Dip your fish in apple cider or wine vinegar.

Tips on Pan-Grilled Cooking Method

Heat pan until smoke appears on the surface. Brush olive oil on the pan before placing the fish steaks on the center.
Do not move fish while cooking. Using a spatula, nudge the fish gently. If it moves easily, it is ready to flip over.
Frozen fish should be thawed properly. Pat dry before grilling to minimize release of excess juice.
Do not use butter when cooking because it tends to darken. Use olive oil or grape seed oil so that it will not burn at medium-high temperature.

If fillet has skin, start cooking with it on the pan. Lower heat to avoid burning.

Pan Grilled Fish Fillet for Picnics

You’ll need fillets or slices of any kind of lean fish, fresh or frozen. Marinate fish in lemon, rice vinegar, crush garlic, ginger juice, sugar, salt and pepper for 1 to 2 hours. Drain well. Pat dry.

Heat the pan. Spray olive oil on hot surface. Place fish on the hottest part. Lower heat to medium to give fish time to cook. Flip fish when it is easily moved. Moving fish when still cooking will cause sticking and crumbling.

Serve with salads and dips. For pan-grilled tuna, peach salsa and parboiled green beans will make a marvelous picnic food idea.

Ingredients for Peach Salsa:

1 cup peaches, peeled and diced
½ cup tomato, diced
¼ cup green onion, minced
2 Tbsp red bell pepper, diced
1 Tbsp lime juice, freshly squeezed
Ginger and garlic powder, to taste
Chili pepper and cilantro, to taste
Honey or sugar, to sweeten taste

How To: Combine all ingredients. If sweet salsa is desired, add more honey or sugar. Refrigerate for a few hours to allow flavors to blend. An hour before serving, bring salsa to room temperature. Serve with pan-grilled tuna, steamed rice, and some green vegetables.

Picnic Carp Fish Grilled on Griddle Pan

Impromptu picnics are often done during fishing outings. A griddle pan can be used to pan-grill the freshly-caught fish. Just heat the pan until very hot before applying oil. Drain the fish after cleaning. Cut a long line on each side to let flavors seep into the tender flesh while cooking. Sprinkle salt and pepper and let sit for 10 to 30 minutes.

Chop some onions and crush several cloves of garlic. Saute the garlic in oil until brown then scoop out. Arrange whole fish at the center of the pan. Make sure the pan is slightly elevated from the fire or the source of heat to avoid burning.

Do not force-flip fish or the skin will stick and the flesh will break. The fish will ‘tell’ you when it is ready to be flipped. Grill the onion rings along the sides when fish is almost cooked. Serve hot with rice or bread.

Picnic Pan-Grilled Salmon Steak with Veggies

Pan-grilling is the least messy method of cooking picnic foods. You just put the fish steaks inside the marinade bag the night before and transfer it in the ice chest the next morning. Bring the grill pan, preferably the non-stick one, and a portable stove. Pack all your favorite vegetables, a small jar of olive oil, some condiments like salt and pepper, and a bottle of white wine.

Ingredients for Marinade:

1 piece lemon, squeezed to get juice
1 Tbsp olive oil
2 Tbsp vinegar, rice or wine
1 tsp Dijon mustard
1 tsp ginger juice, freshly squeezed
¼ cup green onions, minced
1 tsp honey or sugar

How To: Mix all ingredients in a small bowl. Put marinade and fish steaks inside a sturdy food bag. Let sit inside the refrigerator. Flip over from time to time to make sure all sides are coated with marinade.

In these modern times where fast food establishments dominate the busy lives of the average working people, and where posh restaurants are impeccable approaches to special gatherings and occasions, one would wonder how he can possibly arrange the perfect picnic.
Planning picnics need not be so elaborate and grand. Picnics are about enjoying the great outdoors while eating good home-cooked meals with their rustic simplicity that fast foods and restaurants alike cannot provide. The following are some great recipes that you can bring to any picnic, without the hassle in preparations.

Minty Tomato Salad

You can never imagine how a few snips of mint leaves can bring a boring tomato salad into life. Wash and cut 2 plump red tomatoes into cubes, with sizes depending on your preference. Coarsely chop a few snips of fresh java mint leaves, or any mint available in your area. Add a pinch of salt and pepper and mix well. This salad can be best enjoyed with grilled meat or chicken.

Poached herbed eggs

Ah, what defines healthy meals more than oil-free cooking? I love poaching my eggs, since they don’t give me the rubbery crust that pan-frying makes. Poach eggs on low heat until cooked through. I like mine half-cooked, with the yolk thickly flowing like half-hardened lava. Then chop and mix with a pinch of dried basil, sea salt, and pepper.
Grilled spiced chicken thighs
What I love about going out at picnics is that you can grill all you want and enjoy them right off the grill. On the night before the picnic, rub chicken thighs with ground black pepper, sea salt, minced garlic, and thyme. Pound a lot of lemongrass stalks and squeeze the juice. Rub it in the chicken, between the skin and meat. Let the chicken sit for several hours in the fridge to allow for maximum absorption of the spices. Grill the chicken thighs at six inches above the live coals, for about fifteen minutes per side.

Meaty Sub Sandwich

Prepare cooked cold cut meats by slicing thinly. I like using cured ham or spiced gourmet meat slices, but any meat would do. Cut a baguette in half, then slice through the side but not all the way through. Lay the fresh Romaine lettuce leaves at the bottom, followed by a few slices of juicy red tomatoes, then a scoop of sweet jalapeno pepper preserve. Sprinkle it with pickle relish or slices, then place meat on top. Wrap in paper or baking sheets. Add the dressing only right before eating so that your sandwiches won’t get soggy during transport. My favorites are honey mustard, garlic mayo, and ranch dressing.

Tropical Fruit Cooler

Place ripe mangoes, strawberries, honeydew, green apple, and carrots in a blender together with half a cup of water. Strain, or leave pulp if you want a smoothie. Add sugar or syrup to desired sweetness. Pour into airtight jugs.
And there you have it, nice and easy recipes for great picnic food. Don’t forget to bring your cooler with lots of ice packed around beer bottles and sodas, or your homemade fruit coolers.
Pearl is a college girl in the Philippines who recently found the love for cooking, and writes about all her food adventures and home-cooked recipes in her personal blog, Summers in Love.

Most people consider May as the Barbeque Month and everyone is ready to enjoy the month-long season of outdoor cooking and dining. Who can resist the mouth-watering smell of grilling foods? Picnics will be everywhere: in the yard, in the woods, in the beach, and anywhere sunny. But who says that picnics are only for summer? Almost every home around the world owns a grill so that cooking outside will always be an option whenever family and friends gather on a sunny day or under a balmy night. Watching the stars while listening to sizzling of foods on the grill will surely stir the palate of everyone in the barbeque party.

Picnic grilled foods need side dishes to make these outdoor meals complete and satisfying. For picnic-goers who are not much fond of meat, serving rice and salads is fine. Throwing in some seafood dishes along with the barbequed cubes and chops will be like heaven to some who prefer to stay away from meat.

Here are some picnic seafood recipe ideas. They are easy to prepare and do not require much ingredients.

Picnic Rice with Seafood

Seafoods are best-tasting when cooked fresh but frozen will do just fine when thawed and drained properly. Parboil the seafood ingredients to remove fishy smell. Canned seafoods will shorten the cooking time. Use the non-sticky and long-grained variety of rice.

Ingredients:

4 cups cooked rice
1 cup whole kernel corn
1 cup cooked green peas
1 cup whole almond
1 cups squids rings, skinned and washed well
1 cup clam flesh
2 cups shrimps, deveined and shelled
1 salmon or tuna, flaked
¼ garlic, minced
½ onions, coarsely chopped
Salt and pepper, to taste
2 Tbsp oyster sauce
¼ cup vegetable oil

How To: In a non-sticky wok, saute garlic in hot oil until golden. Add in onions. Stir in squids and clams. Simmer for about 3 minutes. Add salmon or tuna flakes. Simmer for another 3 minutes. Place shrimps on top and cover. Cook until shrimps changed color. Pour oyster sauce and sprinkle salt and ground pepper. Add corn, peas, and almonds. Stir to blend well. Add enough amount of water only when needed. Cover and simmer for 10 minutes. Fold in cooked rice until all ingredients are combined together. Remove from heat. Arrange the long strips of red bell pepper on top as garnishing. Serve hot or warm with any grilled meat dish.

Crunchy Squid Rings on Picnic Fresh Salad

Fried squid rings are great picnic appetizers. They are tasty and satisfyingly cripsy. This picnic seafood recipe is very simple to prepare. You just need big squids, fresh and cleaned all over. Dip in garlic-vinegar or sprinkle on top of green salad. Best served with ice-cold beer.

Ingredients:

2 lbs medium- to large-sized squids (remove head, innards, bone, and skin), wash well and cut into rings ½-inch thick
2 cups vegetable frying oil

Ingredients for Coating:

3 eggs, lightly beaten
1 cup all-purpose flour

Ingredients for Marinade:

Salt and ground pepper, to taste
5 cloves garlic, minced
1 Tbsp cup soy sauce
1 piece lemon (used only for washing off the fishy smell)

How To: Squeeze one half lemon on squid rings. Stir by hand to make sure every piece is coated. Set aside for 1 minute. Wash once and drain well. Soak squids in marinade for 1 to 2 hours inside the refrigerator.

In a shallow bowl, add small amounts of flour to eggs. Stir and combine well to make a smooth and thick batter. Drain squid rings and dry on paper towels. Dip each ring and coat with batter.

Heat oil in a deep frying pan. Wait until smoke appears on the surface to make sure that oil is hot. Drop squid rings one by one. Avoid crowding to attain desired crispiness. Skewer rings in short bamboo sticks and serve in a platter with several kinds of dip.

Tasty Lobster Meat Recipe for Picnic Outings

Seafood lovers will be ecstatic to see any lobsters dish served on the picnic table. This picnic seafood dish is very easy to cook. Fresh and live lobsters taste better but the preparation is a bit difficult for the novice. Just buy the lobster flesh with shells and veins removed.

Ingredients:

2 lbs lobster
Salt and ground pepper, to taste

How To: To retain the tasty juice inside the lobster flesh, just steam it. Place lobster in a bowl and sprinkle salt and ground pepper. Stir by hand to make sure each piece is seasoned. Place the lobster in the steamer and simmer for 20 to 30 minutes over low heat. Serve on top of green salad.

Picnic grills are important in picnics and barbeques. Make sure the old grill is still in working condition. Do not forget to bring charcoal.

Grill Fish Under the Picnic Sun

Fish tastes good when grilled and served hot over crunchy vegetable salad or tasty veggie side dish. Fish can be cooked in many ways but the secret to make it taste and look delectable will always be on the method of preparation.

If a whole fish is desired, the head and the tail must remain intact. Remove the scales and the extremities. Wash fish thoroughly. To remove the fishy smell, squeeze lemon juice over and inside the fish and set aside for about 5 minutes before final rinsing. When lemon is unavailable, rub the fish with salt and rinse in vinegar water.

The preparation for fish fillet and slices are basically the same. After cleaning the innards, the head and tail are cut off. Slicing or filleting the fish to desired thickness requires a steady hand, a very sharp knife, and a firm surface. Freshly caught fish is always at its best, especially if you’re the fisherman. Whenever you bring the fishing rod, do not forget to include a portable grill and a bag of coal.

Picnic Grilled Trout

This very simple grilled recipe calls for whole fish. Perfect for a fishing outing, this no-fuss dish requires only a bag of fresh green salad, a couple of lemon and cherry tomatoes, and some salt and pepper. A grill may not be needed because the fish could just be speared on long sticks protruding from the ground and left alone to roast over a small campfire. Of course, there’s no guarantee that your fishing trip will be productive. Bring along your own fish that you can cook while waiting for the first catch of the day.

Ingredients:

3 medium-sized whole trout, cleaned and washed well
1 piece lemon
Salt and pepper, to taste
Long sticks

How To: Squeeze lemon over fish and set aside for 10 minutes and drain well. Create small diagonal cuts on both sides of fish. Sprinkle salt and pepper all over the fish. Carefully impale fish with stick, starting from head through the tail; then place over hot coals to grill. Fish is cooked when flesh flakes easily with fork. Serve with crisp lettuce leaves, tomato, and lemon wedge.

Grilled Fish Steaks for Picnics

Fish steaks are more manageable to grill when placed in between racks. Rub oil to clean and dry grates to avoid sticking. Wait until the coals are very hot before placing the fish steaks over the heat.

Ingredients:

6 fish steaks, thawed and drained well
1 Tbsp olive oil
2 Tbsp Worcestershire sauce
1 Tbsp ginger juice, freshly squeezed
2 Tbsp lime juice, freshly squeezed
1/8 ground red pepper
Salt, to taste

How To: Mix all ingredients and set aside to let fish soak in the flavors. Baste the fish steaks with the marinade while grilling. Grill for about 10 to 12 minutes or until cooked. Cooking time depends on the thickness of fish steak. Serve hot over potato and pepper salad.

Picnic Fish Barbecue

Try spearing chunks of fish meat to skewers with vegetable cubes in between and you’ll have a tasty and healthy-licious fish kebab. Hold your breath while grilling the colorful picnic food creation because your mouth will surely water while the appetizing aroma fills the air. Do not forget to bring the assorted dips for these picnic fish barbecues.

Ingredients:

1 pound fish cubes, drained well
1 lemon
Salt, to taste
1 cup yellow squash, cubed
1 cup jalapeño pepper, cubed
1 cup celery, cubed
3 Tbsp olive oil

How To: Marinate fish cubes in lemon and salt for 15 minutes. Drain well. Impale one fish cube in between each vegetable cube. Brush olive oil over the kebab before placing over hot coals. Grill for 7 to 10 minutes, or until cooked. Serve hot with vinaigrette or mayo dressing as dips.

Picnic Grilled Fish Burger

Burger lovers will have a chance to taste a different flavor of burger. Anyone can get hooked to a cholesterol-free and heart-friendly picnic fish burger. This recipe is so easy to prepare. Just grill everything: the fish fillet, the buns, and the veggies.

Ingredients:

1 pound fish fillet, drained well
1 piece lemon
2 Tbsp olive oil
Salt and pepper, to taste
2 cups lettuce, shredded
1 cup tomatoes, sliced
½ cup onion rings

How To: Wash fish fillet with lemon water and drain well. Sprinkle salt and pepper. Set aside for 5 minutes. Brush both sides of fish fillet with olive oil to avoid sticking on the grill rack. Drizzle oil on vegetables while grilling. Arrange grilled fish fillet and vegetables in hot buns.

Enjoy Picnic Grilled Fish Even Without the Sea

Even when the beaches and seaside picnic groves are far away from home, grilled fresh fish as one of picnic foods can make a trip to the woods more enjoyable. Pack the supermarket-bought fish on ice to preserve its freshness during travel. Grilled fish need only a bowl of tangy vegetable salad to create a full meal. Of course, a glass of wine will surely add style to your picnic grilled fish dishes.

Design Your Sandwiches

Sandwiches are always the ‘star’ in picnic outings. Easy to make and delicious to look at, sandwiches are really perfect picnic foods They are also the most versatile because almost anything can be made into sandwiches. By just using a bit of creativity during preparation, any sandwich can look lip smacking and taste really delectable.

More often than not, most ingredients for simple but tasty picnic sandwich recipes are found inside the kitchen. Or outside the house, if there’s a herbal and vegetable garden in the backyard. Simple recipes for sandwiches may need just a dollop of mayonnaise (together with some cheese and ham and tomatoes and cucumber and onions) spread in between two slices of loaf bread, or buns, or pita, or panini. With some imagination, lettuce can be substituted by arugula or fresh basil leaves. Sandwiches can also go singles and open-topped just like pizzas.

Easy Tips on Sandwich-Making

Do you always have soggy and sad-looking picnic sandwiches? No more worries now because your next sandwiches will remain fresh and firm from the moment they were packed in picnic baskets until they were served on picnic tables. The secret is on the method of preparation of sandwich ingredients.

Tip #1: After thoroughly washing leafy vegetables (like lettuce and sprouts), put them in a strainer and drain well. Arrange these vegetables on two layers of absorbent paper towels to dry. When slicing juicy vegetables (such as tomatoes and cucumbers), pat both sides of each slice on a paper towel to remove dampness.

Tip #2: Remove excess oil, meat juice, or wetness from the meat fillings. Cold cuts like ham or salami would get shiny with their own fat when warmed in the oven. Hotdogs and burger patties have more fat content because they are fried in oil. Arrange the cooked meat on screen wires to drain and pat dry on paper towels before putting on bread.

Tip #3: Do not wrap or pack sandwiches that are still hot. Moisture that would build up inside a closed container will make your sandwiches wet and mushy.

Picnic Ham and Cheese Bite-Sized Sandwiches

This is the most common sandwich that almost anyone could prepare with his eyes closed. But your ham-and-cheese picnic sandwich need not look and taste boring. Don’t just slap two slices of ham and cheese in between breads. Why not cut the bread into four and create cute sandwiches that fit a single bite?

Ingredients:

6 pairs of sliced whole wheat loaf bread, cut into quartets
3 cups thinly sliced ham, cut into same size with bread
1 cup sliced cheese, cut into same size with bread
3 medium ripe tomatoes, sliced to form ringlets
2 cups lettuce, shredded
½ cup cherry tomatoes or grapes or berries, as garnishing

How to: On top of bread, arrange several slices of ham and cheese; then add a ring of tomato and a shred of lettuce; and garnish a single cherry tomato or grape or berry at the center of the bread. To avoid toppling the mini-tower sandwich, push a short stick right through the decorative garnishing on top. Serve with hot or cold drinks.

Open-Topped Picnic Sandwiches for Kids

Here’s another mini-sized sandwich recipe. Let your kids call them small pizzas because they have similar ingredients minus the sauce. Bake or no bake, these picnic munchies taste good and give energy to everybody. There’s a lot of cutting to do but it will be worth the effort when you hear the appreciative oh’s and ah’s while they are being eaten.

Ingredients:

2 pieces long bread, cut into 1/2-inch thick slices
4 cups hotdogs or sausages, cut into cubes
½ cup white onion , cut into cubes
2 cups cheese cubes
1 tsp olive oil or butter
1 Tbsp parsley, minced

How to: On a non-stick pan, stir-fry hotdogs or sausages with oil or butter over medium heat until slightly toasted. Stir in onions and cheese. Sprinkle minced parsley. Remove from heat and set aside to cool. Scoop one tablespoon of mixture and arrange on top of each bread slice. Serve with cold drinks.

Smoked Salmon and Caviar Sandwich Recipe for Picnic

Both smoked salmon and caviar are expensive. But this classy sandwich recipe calls for a special occasion that does not want to make a fuss about it. Most couples seek silence and solitude during bonding time. Picnic outings are one of the simplest ways of communing with Mother Nature. Sharing each other’s secret thoughts becomes more natural when surrounded with fresh country air or when looking far out to the sea. Feel more recharged while savoring the exotic taste of the smoked salmon and caviar sandwich with your loved one.

Ingredients:

1 piece long and round white bread, cut into thin slices
½ cup smoked salmon flakes
¼ cup caviar
½ cup whipped cream

How to: Spread whipped cream on bread. Arrange a half teaspoon of smoked salmon flaked on top. Garnish with ¼ teaspoon of caviar. Create sandwiches with only caviar or salmon on top. On a flat-surfaced plate, arrange the canapés along each other according to their toppings. Serve with a glass of white wine.

Bring Your Family to a Picnic Everyday

Do not just make sandwiches for snacks. Always add some color or some zest in your sandwich creations to turn every snack to picnic time.

Food Ideas for an Easter Picnic

As far as holidays across the world go, Easter is very popular. When people think of Easter, many of them think of the Easter bunny, dyed eggs, baskets, baby chicks, and other cultural traditions. But, an Easter picnic is also a great way to celebrate the holiday. Easter is in the spring, which means the weather will almost always be absolutely perfect for a nice family picnic outdoors. This article will talk about some preparations you can make to hold your own Easter picnic, including ideas for main courses, food garnishes, and other dishes. We’ll also talk a bit about decorations you can add to the picnic to give it an Easter flair.

Holding an Easter Picnic: Traditional Easter Foods

As with most major holidays, Easter has foods that are traditionally associated with it that people all across the world typically enjoy at that time of year. Chocolate is, of course, a major part of Easter celebrations. Roast lamb is typically the meat of choice, as is ham, in most households. The trick is to find a way to incorporate these ideas into an Easter picnic, since most of the time these foods are eaten at a dinner or feast.

One idea for a main course for a picnic that incorporates traditional Easter main courses is creating roast lamb pitas. This is a delicious way to eat roast lamb that also has its roots in the Middle East – which makes it appropriate for a holiday that celebrates an event that occurred in the Middle East! You will need:

- 2 pounds of lamb that has been cubed

- 1 medium-sized yellow onion that has been chunked

- 2 green peppers, chunked

- 1 ½ teaspoon of garlic, crushed

- ½ teaspoon of tumeric

- ½ teaspoon of coriander

- 3 ½ tablespoons of lemon juice

- 2 large tomatoes, wedged

- 2/3 cup of vegetable oil

- ½ teaspoon of cumin

- ½ teaspoon of basil

First, combine all of your spices into a bowl with the oil and lemon juice. Add in the lamb and let it marinate under cover for 1-2 hours. Then, skewer the lamb cubes and the vegetables on skewers any way you please. I like to alternate meat with vegetables, but it’s up to you. Grill on each side for about 6 minutes until the meat is done.

Holding an Easter Picnic: Food Garnishes

A food garnish can add a bit of flair to the main course, and also adds good flavor to the dish and the rest of your picnic. There are several food garnishes you can use for your Easter picnic if you so choose (I recommend using at least one). Believe it or not, fruit garnishes go great with roasted lamb. I recommend using pomegranate as your garnish. Just dice the fruit and arrange it on the plate around the roast lamb. It will add a fresh and pleasant taste to the meat.

Another idea involves garnishing desserts. Fruit is, as always, a perfect garnish for most desserts. You can also use chocolate, which works because chocolate is a classic Easter component. Try this: Bring a cheesecake and drizzle chocolate on top, and add sliced strawberries or raspberries. It will taste delicious and will go along great with any dish at your Easter picnic.

The sun is shining and the air is balmy. If you got this gorgeous weather on a weekend, dig up those picnic baskets in the storage and pack them up with lots of picnic foods and picnic snack goodies. The kids will love to go on a picnic even when it’s not summer yet. You don’t have to stay outdoors for long. Enjoy the morning sun for an hour or two playing noisy ball games or hiking. These physical activities will give everyone a zesty appetite so make sure that snacks are in abundance.

Preparing delicious snacks for a picnic need not be elaborate or expensive. With just a few simple and low-cost ingredients, a number of savory picnic snacks can be whipped out within just a short time. To serve the picnic snacks warm and inviting, pack them while hot inside insulated food containers. Bring along several thermos filled with hot and creamy mushroom soup or coffee. Ice-cold fruit juice drinks would also be a hit.

Ingredients:

2 sticks (or 1 cup) softened butter
1 and ½ cups sugar, granulated
1 cup sugar, light brown
2 pcs. medium eggs
2 tsps. vanilla extract
1 and ½ cups all-purpose flour, sifted
½ cup chocolate powder (use dark chocolate if preferred)
1 tsp. baking soda
½ tsp. salt, fine grained
3 cups rolled oats (or quick cooking oatmeal)
½ cup almond nuts or peanuts, coarsely chopped

How to: In a large-sized mixing bowl, blend butter and all sugar with an electric beater. Add eggs and vanilla, continue beating. Stir in flour, chocolate powder, salt, and baking soda. Using a big spoon, fold in the oats and nuts. The batter should be firm and not watery.
Easiest Chicken Salad Pita Sandwich

There are about a thousand ways of preparing the most famous meal in the whole world—the sandwich. A sandwich can be made with one, two, or more slices of bread. An open sandwich is just a slice of bread with delicious toppings on top like pizza. A tastier and healthier sandwich can also be made from a simple chicken veggie salad and very thin bread like pita. These pita pocket sandwiches are perfect to bring as picnic food snacks.

Ingredients:

2 pcs. whole chicken skinless breast, boiled and shredded
1 cup plain yoghurt
1 cup mayonnaise, light
1 small can crushed pineapple, well-drained
½ cup roasted walnuts, coarsely chopped
1 small head lettuce, well-drained and shredded
2 pcs. large ripe tomato, sliced thinly
2 Tbsp. fine sugar ( or honey)
Salt and ground pepper, to taste
1 pack pita bread, warmed and halved

How to: Combine shredded chicken meat, crushed pineapple, yogurt, mayonnaise, and chopped walnuts. Mix well and set aside inside the refrigerator. Warm the pita pocket breads over direct heat of the stove. Arrange lettuce and tomato slices on both sides of the pita pocket. Fill with chicken mixture generously. Wrap it individually in foil or wax sheets, then arrange inside a plastic food container with cover.

Caramelized Whole Apple-on-Stick

Apples are popular picnic fruit snacks. The tanginess and the crunchiness of apples is refreshing especially when being eaten during picnic hikes. There are lots of ways to prepare apples to be a delicious snack. Chop them to combine with other fresh fruits as salad or to bake as pie, tart, or cake. Or coat the apples with caramel to make them taste like candies kids would surely love.

Ingredients:

10 small apples, well-washed and well-dried
1 pack caramels, melted
1 cup nuts, finely chopped (optional)
1 cup marshmallow, small bits (optional)
1 cup chocolate bits (optional)
10 popsicle sticks

How to: In a small semi-deep sauce pot, melt the caramel over low heat. Replace the stems from the apples with the popsicle sticks. Dip each apple into the pot to cover with melted caramel. When the whole apple is coated, place it on a lightly buttered tray. Put some space in between the apples to avoid sticking while drying. Optional: While caramel coating is still wet, roll the apple on any choice of toppings. The caramelized apple should be firm and ready after about 30 minutes inside the refrigerator.

Picnic Food Ideas: Five Great

Sandwiches

Of all picnic food ideas, the sandwich is probably king. Sandwiches are easy to make, are delicious, and can be transported easily wherever you want to go. Plus, the sheer amount and variety of sandwiches make them perfect for a lunch or dinner outing in the great outdoors. The picnic food ideas for sandwiches given below should give you a good start on narrowing down those choices to these tried and true classics.

1. Bacon, Lettuce, and Tomato: A Simple and Classic Picnic Food Idea

We all know what a BLT is, because the timeless combination of bacon, lettuce, and tomato has fed our hungry stomachs for generations. This sandwich is a great idea because fresh lettuce and tomato and crispy bacon just makes for a superb meal. To make it a little different, try adding a Dijon mustard, or putting the sandwich on marbled rye bread.

2. Ham and Cheese Sandwich

Ah, another classic. Ham and cheese go together like peanut butter and jelly, and are just as savory. For an update on this picnic food idea, try putting the ham and cheese on a croissant (perhaps a buttered one). You can even replace the cheddar cheese with another type, or add another type of cheese (I recommend Swiss) to the sandwich for more flavor.

3. Chicken or Tuna Salad Sandwiches as Picnic Food Ideas

For good sandwiches that can be eaten at any type of picnic, try chicken or tuna salad. I prefer a mayonnaise-based chicken salad, made with diced pickles. You can use mustard for your base, though, and it will still taste great. For tuna salad, you absolutely must have relish mixed in; it gives it that sweet kick. For the bread, croissants (or even focaccia bread) is a great complement.

4. A Picnic Food Recipe for a Vegetarian Sandwich

Not every picnic has to have meat at it. If you are a vegetarian, or just want to get away from meats and more towards fresh veggies, then a vegetarian sandwich is the way to go. I suggest a sandwich with the following ingredients: purple onions, lettuce, sliced tomatoes, banana peppers, sliced cucumbers, black olives, Swiss cheese, and your choice of dressing. I really like raspberry vinagrette to go along with this dish.

5. A Taste of Italy: Grill Your Own Panini

If none of the above tickled your fancy or whetted your appetite, then take any combination of meat, any combination of cheese, and melt them between two pieces of sourdough bread on the grill. A panini served hot is a mouth-watering thing. For more taste, sprinkle some parmesan cheese and add a touch of honey mustard for a great addition.

There you have it. For all of the sandwich lovers out there, these five great picnic food ideas will give you a great start for your next picnic. The main rule with a sandwich, though, is to just pick the foods you love, throw them together, and see what works. Who knows? You may be pleasantly surprised with your own picnic food idea!
