Why we have chosen beetroot as a picnic idea this time? First of all beetroot (also known as beet) can be used in different salad variations, and second, it has many health benefits. Beet is good for regulation of blood pressure, heart and liver diseases, etc. Thus we hope you will find the picnic food recipes herein very useful. Enjoy!

The beetroot salads we present today in some countries are known as Russian salads. Whereas in Russia the salads are usually known as “vinaigrette” – the word is derived from French but in Russian cuisine it has altered its original meaning. Originally “vinaigrette” would mean an olive oil and vinegar dressing spiced with different herbs. We also will use olive oil and herbs in the beetroot salad but we will have pickled cucumber and cabbage instead of the vinegar.

Beetroot Salad
Yields 4 servings.

Ingredients:
3 medium size potatoes
3 medium size beetroots
2 medium size carrots
Spring onion or 0.5 bulb onion
Seasoning: salt and black pepper
vegetable oil
herbs: parsley, dill, coriander

Instructions:
Wash the vegetables. Fill a big pot with water, bring to the boil. Put the potatoes, beet, and carrots in the pot to cook till tender for some 15-20 minutes. Beet may take longer to well cook through. When done take out the veggies, allow to cool. Put in them in cold water to cool sooner. Peel the vegetables and cut in small cubes. Combine the cut vegetables in a medium bowl. Sprinkle with salt and pepper. Add vegetable oil, toss to coat well. Thinly chop the onion and the herbs. Place in the fridge for an hour. Serve on the plates. I think you will enjoy this salad while on a picnic.

Russian Salad
This is a non-vegetarian beet salad variation. Yields 3 servings.

Ingredients:
300-400g meat fillet (beef, chicken, or pork)
1-2 beets
2 medium size potatoes
3 eggs
1 medium size carrot
2-3 pickled (or marinated) cucumber
200g mayonnaise
Spring onion or 0.5 bulb onion (optional)
seasoning: salt and black pepper
vegetable oil (optional)
herbs: parsley, dill, coriander

Instructions:
Cook the meat fillet in the boiling water, add salt, allow to cool. Peel the vegetables and the egg, cut into small equal cubes. Boil the vegetables (potatoes, carrot, beet, eggs), allow to cool. Cut the vegetables into small pieces. Combine the veggies, eggs and the meat in a medium bowl. Season with salt and black pepper, add mayonnaise, vegetable oil (optional), and finely chopper herbs. Serve the salad at room temperature.

Classical Russian Beetroot Salad, Vinaigrette
This salad is an old Russian meal. Above you saw variations of the beetroot salad, herein we present its traditional recipe. Good as picnic food all year round, especially best in autumn and winter. Yields 4-5 servings.

Ingredients:
3 medium size potatoes
3 medium size beetroots
2 medium size carrots
pickled (or marinated) cucumbers
pickled cabbage
200g boiled or canned brown beans (or kidney beans)
seasoning: salt and black pepper
vegetable oil
Spring onion or 1 bulb onion
herbs: parsley, dill, coriander

Instructions:
Wash the vegetables. Bring water to the boil in a big saucepan. Carefully put the vegetables (potatoes, carrots, beets) into the pan. Boil the veggies till tender. Beets can remain in the pan for another 10-15 minutes when you take out carrots and potatoes. When the vegetables are cool enough, peel and cut them. Thinly chop the pickled cucumbers, cabbage, onion and herbs. Combine the veggies, add beans. Sprinkle with salt and pepper, drizzle oil. Toss to coat well. Serve at room temperature. You can keep the salad in the fridge for a couple of days.

Useful tips:

1. If you want the beet to become tender sooner, put the almost boiled beet under the running water till the beet cools completely. The cold water should soften the beet.
2. If you want potato remain white in the salad (and not purpled by the beet) then, before adding beet cubes to the salad, salt and coat them in the oil separately in another bowl.
3. Some people cook potatoes in the salty water.

In fact there can be many variations of this traditional Russian salad. For example you can have it with fish, sea girdle, or green peas. Beetroot, carrot, and potatoes can serve as a base for your further experiments. Also some people add dress the salad with vegetable (olive) oil and herbs the other prefer mayonnaise.
