Beef Stroganoff – or some people call it Steak Stroganoff – is one of those recipes that have different variations. I myself have also tasted different beef stroganoff – and, believe me, every cook claimed this one was the ‘real’ authentic. Though I have made my conclusion – which is – my recipe is the best! It is easy to do and I like it as it is without mixing other ingredients that you may see in different recipes. In the following article I will provide information also on what additional ingredients or cooking methods can be used when cooking Beef Stroganoff for your picnic food. Enjoy!
Preparation time (in case you have tender boiled beef fillet): 10 minutes, cooking time: 30 minutes, Yields 2-3 servings.
500 g tender cooked beef fillet
1 large yellow onion
200 g sour cream
1 tbsp white wine vinegar
2 tbsp all purpose flour
3 tbsp olive, vegetable oil, or butter
1-1.5 cup water
Seasoning: salt, black ground pepper
The best beef cut for the recipe is tenderloin. However you may use another cut, take a lean part without gristle. If using another cut, select a lean cut and remove any visible membranes, fat, or gristle. Cut beef into 0.5 inch wide and 2 inch long strips.
Also peel and rinse yellow onion. Cut it lengthwise in halves and thinly slice.
Put a heavy bottom, deep, non-stick skillet over medium heat. Add butter or oil, add onion when the butter (or oil) is heated. Sprinkle a small pinch of salt over the onion and pan-fry for 5 minutes till onion becomes softer.
Add beef strips, stir to combine well with the onion, sprinkle ground black pepper, drizzle the white wine vinegar. Maybe more salt will be needed if the beef was boiled without salt. Do not cover the skillet with a lid. Pan-fry the ingredients for 10-15 minutes over medium heat till onion and beef steaks become golden-brown.
When done, sprinkle flour over the onion beef mix and stir well the ingredients. The beef strips should be slightly coated in the flour. Leave over heat while your prepare the sour cream and water mix.
Mix together water and sour cream till well thinned. Then add the mix into the onion beef mix and stir to incorporate. Bring to the boil, then reduce heat to minimum. Let the picnic food simmer till liquid is reduced to a thick paste. When the picnic food is cooked let it rest for at least 10 minutes covered and wrapped to absorb juices and allow aroma play out better. Serve warm over noodles, rice, or French fries.
To decorate add chopped shallots or fresh green onion.
The Recipe Variation:
With this recipe you won’t need a boiled beef. Take thinly cut fillet slices, pound it with a mallet; sprinkle with salt and pepper. Cut the slices into 0.5-2 inch stripes and pan-fry in hot oil or butter till browned. When done fry onion and fresh thinly sliced mushrooms (preferably champignons). Add 1 tsp mustard in the sour cream and water mixture. Combine beef stripes, onion and mushrooms, add sour cream mixture and simmer the ingredients. When excess liquid reduces over low heat, turn the heat off, cover the skillet with a lid and allow the mixture to rest and absorb flavors and juices. Serve warm.
