The American chef and author Anthony Bourdain once said that he has long believed that good food and good eating are all about risk. Whether we’re talking about unpasteurized Stilton, raw oysters or working for organized crime ‘associates,’ food, for him, has always been an adventure. – And I couldn’t agree more. No matter how simple the food is in your plate, as plain as it looks, whether it may be for a special occasion or just an everyday meal, and effort has been put on it plus the creativity, then it’s nothing but extraordinary!
Food is truly an adventure; it’s also a journey of trying and testing, defining and extracting the perfect taste, an escapade of flavor and savour living up to the standards of what everybody may perceive. It’s also a challenge of pleasing one’s own tongue, pleasing the hungry, pleasing the eyes by the appearances of the food.
And when you supplement it with extra goodness, extra ingredients, and load it with your passion, an ignition of a magnificent meal arouses.
So here’s one of the many healthy recipes that you will enjoy!
When you are planning to have a good and spontaneous picnic outing, the last thing that you would want to have is a growling stomach. Of course! Who would want that? And the first thing that you would consider is to prepare the food easy and hassle-free. And what better food can you think of than a POTATO! Yes, you’ve read it right. Everyone’s favorite potato! Not very expensive and sure can satisfy your hunger craves. But we’re not going to make it the usual mashed potato served every dinner since it’s for picnic. Then we have to make it the traditional barbecued potato salad with a touch of a very delightful sauce! And sure, it’s a perfect picnic recipe that doesn’t just cater the quantity but also the quality that it may bring. One good factor is? It is very deliciously healthy!
First things first, we need the Ingredients:
750g kipfler potatoes
2 teaspoons olive oil
4 green onions, sliced
2 tablespoons chopped gherkins
1/4 cup chopped fresh flat-leaf parsley leaves
1/2 cup sour cream
2 tablespoons white balsamic vinegar
Easy Instructions on how to do it:
First, it is necessary to prepare the containers – a saucepan, a bowl and a plate.
Make sure to wash and clean the potatoes. The potatoes must be placed in a large saucepan or any container that can accommodate them. You have to cover the potatoes with cold water. Bring to a boil over high heat, and after that, reduce heat to medium. It is better to boil the potatoes for 10 minutes or until the potatoes are already tender.
After which, you drain them. Set aside for 3 minutes or most definitely for 5 minutes or until cool enough to handle.
To add creativity to it, cut the potatoes diagonally into 2cm-thick slices. Then, drizzle it with oil. Of course! To perfect our barbecued potatoes, we need to heat a barbecue plate or charcoal grill over medium-high heat.
Then, cook potatoes for 4 to 5 minutes each side up until you can see it browned.
Transfer to a bowl. Then now you can add your sliced onion, chopped gherkin and fresh-parsley. Add the sour cream and vinegar together in a jug. Season with salt and pepper, you can add more pepper as long as it satisfies your crave! Shower over potato mixture.
And voila! It’s ready to be served.
In every picnic event, we are always eager to impress our loved ones and friends with good food. Especially for mothers, we don’t want to embarrass our children by just making some ready-to-go effortless picnic food. As what they say, the food that we offer and make at home is actually a representation of how much we value and love the people living in it! As mushy as it may sound, good food is a connection of our well-being. It nourishes our souls and enlightens every organ of our body that is dependent on it.
This is the perfect recipe for you and your family! And so now I leave the words of the famous Luciano Pavarotti and William Wright. “One of the very nicest things about life is the way we must regularly stop whatever it is we are doing and devote our attention to eating”. So, bon appétit!
Note: You can also use baby potatoes instead of kipfler potatoes. That way you can save more!
