Recently I began to love the idea of deviled (stuffed) eggs. To tell the truth now I even don’t remember where have I first tasted this picnic food but I remember it was delicious. Deviled eggs are good for picnics and parties. If guests are arriving to your place in the evening and you don’t have much time to cook or are in no cooking mood then deviled eggs will also become your ‘life-saviors’. Deviled eggs are easy to cook, you can stuff them with whatever you find in your fridge. If you use your imagination to properly combine ingredients Deviled eggs may become a yummy delicacy at any get-together. As eggs have rich nutrient qualities you can be sure the guests will not remain hungry. As a side dish add French fries, rice, or something else. Also the deviled eggs are beautiful and catch the eye. Try making different fillings, some with fish, ham, cheese, add more spices to some eggs and decorate them differently. In this recipe, or better to say, recipes it is not easy to say how many servings you will have. Some people would enjoy half of the deviled egg (meaning one portion) other may have 3-4. It is not a dietary food and it is rich in calories. For each recipe, cooking time 10-15 minutes, preparation time 5-10 minutes.

Recipe 1

Ingredients:
5 eggs
1 small onion
1-2 tbsp oil (for frying)
4 small fresh (or dried) mushrooms
1,5-2 tbsp melted butter (optional)
coriander
Salt and black pepper

Instructions:
Note: Whatever the filling eggs are prepared in the same manner.

Boil the eggs for about 15 minutes on middle heat. Place in cold water to cool completely. Peel the eggs. You may rinse the peeled eggs in cold water to remove minor peel particles. Dry the eggs using a paper towel. Divide each egg in two parts either lengthways or widthwise. Carefully remove the yolk from each half. At once drop the yolks into a bowl where you will prepare the filling mix.

Tip: To make the halves steady carefully slice off the bottom sides either of those that are cut lengthways or widthwise (as shown in the picture above).

If needed place the mushrooms in cold salted water for 5 minutes to allow soil separate. Rinse well. Place in the boiling water to cook till tender. When done cut into small pieces or process in the food processor along with the egg yolks.

Panfry the finely chopped onion in the vegetable oil, add some salt. Combine with the yolk and mushroom mix. Add finely chopped coriander, salt and pepper. Stuff the eggs. Decorate to your taste.

Bacon Stuffed Eggs.

Eggs with Bacon Filling
Ingredients:

5 eggs
50g bacon or ham (about 1 slice)
0.5 small onion bulb
20g cheese
0.5 tsp mustard
2 tbsp melted butter
salt, black pepper, chilli powder
To serve: pomegranate seeds

Instructions:
Prepare the eggs as described in Recipe 1.

Finely cut the bacon slice or process with the egg yolks in the blander. Add finely chopped onion, melted butter, mustard, cheese, salt, black pepper, chilli powder, bland all together.

Fill the egg halves. Top each with a pomegranate seed.

 

Note: The fresh onion either spring or bulb gives a pleasantly juicy savor to the filling. Actually fresh onion goes well together with any filling unless you are already using fried onion.

Smoked Sturgeon Stuffed Egg.

Ingredients:

5 eggs
50g smoked sturgeon or salmon
40g cheese
0.5 tsp mustard
salt, chilli powder
To serve: herbs or mayonnaise

Instructions:
Prepare the eggs as described in Recipe 1.

 

Preparing the Fish Filling
Use a food processor, blander, or mixer to process the ingredients. If you are preparing 2-3 eggs using a fork may be quite handy. Puree the yolks, smoked fish fillet, and cheese. Add mustard and a bit of chilli powder. Stir the mix to combine well.

Tip: to make the filling softer add some melted butter, vegetable oil, or water (very little).

 

To stuff the egg halves with the filling use a butter knife or a teaspoon. Fill the egg halves plentifully as after adding the ingredients the amount of filling has significantly increased. To have the picnic food even more delicious use the filling completely, fill the eggs to the full.

When done decorate the deviled egg halves with a shot of parsley, dill, coriander, or add a drop of mayonnaise on top. Serve at room temperature.
